Top 5 Drool Worthy Potluck Dishes

I thought I’d start a “Top Three Thursday” Blog Series- but for this first post I have 2 extra favourite potluck dishes. Potluck

1)Quinoa Salad Potluck

  • 3 cups cooked quinoa (start with 1 cup dried)
  • Juice of 2 lemons
  • 3 tbsp olive oil
  • 2 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 can black beans, rinsed
  • 1 can corn (or 2 cobs fresh, or 1 cup frozen and thawed)
  • 1/2 small red onion, thinly sliced
  • 1 pint cherry tomatoes, quartered
  • 1/2 cup slivered almonds, toasted
  • 1/4 cup green or black olives (optional)
  • 1/4 cup chopped fresh mint
  • 1/4 cup chopped fresh cilantro (optional)
  1. Cook and cool quinoa
  2. Whisk together lemon juice, oil, cumin, sugar, and salt to make vinaigrette 
  3. Combine quinoa and all remaining ingredients except fresh herbs
  4. Drizzle with vinaigrette, toss to combine
  5. Put in fridge for 1 hour
  6. Add herbs and serve at room temperature Potluck

3)Cuban Sweet Potato Salad

THIS IS MY FAVOURITE RECIPE THIS SUMMER- my friend recently gave it to me- so worth making!

  • 2 Sweet Potatoes (baked and peeled- I do this the day before and put in fridge)
  • 1 avocado cubed
  • 1/2 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 2 tbsp olive oil
  • juice of 1 lemon
  • salt and pepper to taste
  1. Cube sweet potatoes
  2. Add onion, cubed avocado, and cilantro
  3. Drizzle with olive oil
  4. Add lemon juice, salt and pepper
  5. Toss to coat
  6. Serve immediately Potluck

4)Watermelon Salad with Cucumber, Mint and Feta Potluck

 5)Szechuan Peanut Butter Coleslaw

  • 6 tablespoons rice wine vinegar
  • 6 tablespoons vegetable oil
  • 5 tablespoons creamy peanut butter
  • 3 tablespoons soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons minced fresh ginger root
  • 2 garlic cloves minced
  • 2 bags coleslaw mix
  • whatever thinly sliced veggies you want to add, such as carrots, bell peppers, radish
  • 6 green onions, chopped
  • 1/2 cup chopped fresh cilantro
  1. Whisk together rice vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic.
  2. In a large bowl, mix together coleslaw mix, veggies, green onions, and cilantro.
  3. Toss with the peanut butter mixture just before serving. Potluck
